We had to make this cocktail twice because it turned out so bitter the first time. Make sure to only lightly muddle the sage, if at all. If you muddle it too much, it will release an unsavory bitterness into the drink. Even so, this cocktail doesn't fully come together. It has nice elements - tart and floral, with a hint of nuttiness from the orgeat and earthiness from the sage, but it seems a bit confused.
