Ingredients

1 part
lime juice
1 part
sugar
1
lime zest

Directions

  1. Zest the limes and set zest aside
  2. In a nonreactive bowl, juice the limes and weigh (you might want to weigh the bowl first)
  3. Add an equal weight of sugar to the bowl
  4. Stir until sugar is dissolved
  5. Stir in lime zest to taste (and add more sugar/juice as needed)
  6. Cover for 24 hours, stirring occasionally
  7. Strain through fine-mesh sieve
