The Scarlet Ibis Trinidad Rum

Toby's Lime Cordial

lime wedge as garnish

Shake it Up

1. Shake all ingredients with ice
2. Strain into double rocks glass with cracked ice
3. Garnish with lime wedge

"This started as a spin on our house gimlet, but then it took a sharp left turn. It's a confusing drink. Arrack is a funky, weird ingredient that a lot of people don't like. And when you see 'curry' listed in the ingredients, you think it's going to taste like Indian food.
