apple cider vinegar

  1. Rinse cherries and trim any rotted parts
  2. Put cherries (unpitted) into a large nonreactive pot
  3. Mash cherries for several minutes
  4. Pour in enough apple cider vinegar to cover the cherries
  5. Cover and let rest for one week, stirring daily (it might smell a bit)
  6. At the end of the week, stir in sugar and gently boil for one hour
  7. Let cool slightly and strain through a cheesecloth-lined fine-mesh sieve
  8. Test by adding a small amount to iced club soda; add more sugar or cherries if needed
  9. Cool completely and refrigerate (it should keep indefinitely)
